Chel Luciano Schipano is a Calabrese “verace” (truthful). He truly loves to cook his traditional food from Calabria, keeping the recipes passed down by his “nonna” alive.
Italy is famed for its cucina povera, where humble ingredients are transformed into incredible dishes. Calabria is probably the most representative Region of this cuisine, with delicious and simple foods, typical of the Mediterranean Diet
Calabria is famous for its spicy and robust cuisine, emphasizing powerful ingredients like garlic, sun-dried tomatoes and red-hot chilli peppers. Also renowned in this region are salami and cheeses, like the famous Nduja (which Chef Luciano produces each year) or the Caciocavallo Silano and Pecorino Crotonese from Aspromonte or Monteporo.
