Nduja Master Class
‘Nduja: the spicy, creamy, spreadable salami, is a distinctly Calabrian product, but only in certain areas of Calabria. The most famous of these is Vibo Valentia, the home province of Chef Luciano’s Zia (Aunt), who passed on this recipe.
There a many uses for ‘nduja. We eat it on toasted Calabrian bread (crostini), pizza, semi-matured cheeses, and in frittatas and pasta sauces. Fileja con ‘nduja (a Calabrian handmade pasta) and Zuppa di Fagioli con ‘nduja (a traditional bean soup) are common dishes.
The origin of its odd name stems from the Latin inducere, meaning “to insert.” Etymologically it’s connected with two other salami insaccati: salam dla doja from Piedmont and Andouille from France.
Chef Luciano will show you how to make Nduja and you can participate and work hands-on in making the salame.
This class is designed to create your own hands-on experience and your nduja will be ready at the end of the class!
You will learn:
- How to make Nduja
- How to Age and Cure Nduja
- Cooking and Using Nduja.
This class will be a step-by-step hands-on demonstration, meaning you will cook along with the chef in real-time.
The class is sold individually, meaning that one purchased registration is intended for one single person who can join and actively participate in the class.
Included in the “Nduja Master Class”:
– Complimentary Antipasto platter. Upon arrival, you will be treated with Moka espresso complemented with freshly made Zippuli (aka Cuddurieddi). Midmorning we will stop for a spuntino with 1 Glass of wine and a taste of Nduja antipasti. A few of Chef Luciano’s specialties will be tasted.
Wine, beer, mixed and soft drinks will be available to purchase on-site. Feel Free to Bring Your Own Wine for a small fee of $15.
