Ricotta & Spinach Ravioli Class
This hands-on class is dedicated to one of the most beloved dishes of Italian home cooking: ricotta and spinach ravioli, made entirely from scratch.
We will begin with a warm Italian welcome, featuring freshly baked focaccia and marinated olives, a relaxed moment to gather and set the tone for the evening.
Participants will learn how to prepare fresh pasta dough, roll it properly, and shape ricotta and spinach ravioli, focusing on technique, texture, and balance of flavors. The ravioli will be served two ways: with brown butter and sage for a rich and aromatic finish, or with a classic tomato sauce and Parmigiano for a lighter, traditional option.
Throughout the class, Erica will share practical tips and techniques to help you recreate this dish confidently at home.
